Cucumber Tomato Feta Salad is so delicious with a fresh flavorful taste and more of feta cheese! This simple summer salad recipe comes together very quickly. with only a handful of ingredients. It’s one of my favorite salads for summer! The dressing is super easy and adds the perfect flavor to this healthy low carb side.
I am the biggest proponent of trying new foods and also re-trying foods you don’t really like can sometimes be a bit challenging if it didn’t go well in your tummy.
You can’t really beat it – it’s made with just a few ingredients and well loaded with so much flavor! Best of all, it couldn’t be more simple to make.
This Cucumber Tomato Feta Salad is perfect for last-minute cookouts, or dinners with family and friends. I love the fact that it’s made with such fresh ingredients….and the homemade vinaigrette.
How to make cucumber and tomato salad:
2 English cucumbers
6 ounces cherry tomatoes, halved
¼ cup thinly sliced red onion
2/3 cup crumbled feta cheese
2 tablespoons fresh parsley
1 tablespoon fresh dill
3 tablespoons olive oil
3 tablespoons red wine vinegar
Salt, to taste
Start by chopping your cucumbers. I prefer using English cucumbers for the fact that they’re easier to digest because of their thinner peel. You can as well peel your cucumbers if you want, though I never do for this recipe.
Add in some halved grape tomatoes, thinly sliced red onion, and a generous handful of crumbled feta.
Next, drizzle the cucumber and tomato salad with a little olive oil and red wine vinegar. Toss the salad, taste, and add salt as needed.
One thing I love about this wonderful recipe is for the fact is so easy and perfect for a hot summer night!
I used Feta cheese with a salty flavor for these recipes. It’s made from sheep or goat’s milk and it’s soft and crumbly.
If you don’t have or like this feta, you can as well substitute it for queso fresco. It’s a more mild cheese with a similar texture.
Cucumber Tomato Feta Salad
- 2 English cucumbers
- 6 ounces cherry tomatoes, halved
- ¼ cup thinly sliced red onion
- 2/3 cup crumbled feta cheese
- 2 tablespoons fresh parsley
- 1 tablespoon fresh dill
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- Salt, to taste
- Slice the cucumbers into half and then chop into 1/2 in chunks.
- Combine the tomatoes, red onion, and feta in a large bowl.
- After preparing the dressing by combining all ingredients.
- Pour dressing over salad, stir to combine and then salt to taste.
- Cover it tight and put in the refrigerator for up to 4 days.
