This incredibly German cucumber salad is a healthy side dish, made with fresh crunchy cucumbers, red onion, simple sour cream, and vinegar, and It makes a perfect side dish for any all hot summer long.
This yummy refreshing German Cucumber Salad is just great for any BBQ party. This meal is made with crunchy cucumbers and easy sour cream dressing. Fresh dill is compulsory in this recipe because it adds a lot of flavors!
What Type of Cucumber to Use
Any kind of cucumbers will work here, but if you find that your cucumbers have a lot of seeds inside, I suggest you scrape them out to keep the salad from getting watery. This step is totally optional, and if you’re using smaller cucumbers, it’s not necessary to scrape them. Also, if your cucumbers have waxy skin, I recommend peeling them.
How to make cucumber salad with sour cream:
2 English cucumbers
1 tablespoon kosher salt
1 clove garlic, minced
3/4 cup sour cream
2 tablespoons apple cider vinegar
2 teaspoons fresh dill
1 teaspoon sugar substitute
1 teaspoon black pepper
In a medium bowl, whisk together all of the dressing ingredients. Set aside.
Wash and thinly slice the cucumbers.
Add the cucumbers to the bowl with the dressing. Mix everything well.
Stir everything together and serve immediately!
You use garlic for this recipe. Though is not a must but optional. I personally enjoy a hint of garlic in the dressing for a change of taste.
You can as well Y add some thinly-sliced onions to this salad.
Dill brings a ton of flavor to this recipe so don’t skip it. You can use fresh or frozen dill. Dried dill won’t work. If you can’t find dill, chives or scallions would be the next best substitution.
I sometimes substitute sour cream with plain Greek yogurt. It has zero net carbs, and If you like it to be a dairy-free, then just use about 1/4 cup of olive oil instead.
HOW LONG WILL THIS SALAD LAST IN THE FRIDGE?
I will advise you to eat it within a couple of hours. It can stay up to 24 hours in the fridge, although the cucumbers might be soft by that time and bring out some water. Don’t panic when you see that. All you have to do is Just drain the water, stir, serve and enjoy your meal.

- 2 English cucumbers
- 1 tablespoon kosher salt

- Line a baking sheet with a tea towel.
- Thinly slice the cucumbers and lay on the prepared baking sheet. Sprinkle with the salt.
- Let sit for 30 minutes at room temperature to allow the cucumbers to release their water.
- Pat cucumbers dry and add to a large mixing bowl with the garlic.
- Whisk together the sour cream, vinegar, dill, sugar substitute, and pepper in a small bowl.
- Pour the dressing mixture over the cucumbers and toss to coat.
- Serve immediately.
