A wonderful and tasty Healthy No-Bake Pumpkin Pie Energy Balls are fast and easy to make paleo snack recipe that’s packed with protein powder, chia seeds, and so much pumpkin flavor.

They are a delicious and healthy gluten-free dessert or breakfast bursting with fiber, plant-based protein and Vitamin A–which is the perfect morning energy boost! This clean eating recipe is great for adults and kids of all kind, filled with pumpkin, cashew butter, vanilla protein powder, maple syrup, and almond butter or coconut flour. Sweetened with a touch of maple syrup, these healthy treats are refined sugar-free and vegan, as well!

These taste very much like the pumpkin pie cookie dough balls of yumminess. I really have to limit myself to only two per day because I could eat the whole batch.

I preferred to take these pumpkin energy balls before a workout. They’re called energy balls because they’re filled with protein and chia seeds, which give me the energy to seriously crush a class.

Making these energy balls is as easy as mixing a few ingredients together and rolling them into balls. really, very easy. And they need only ingredients.

I use some specific products to make these recipes, but you can substitute any grain-free flour, and any nut butter you want.

How do you make homemade pumpkin spice?

This delicious homemade pumpkin pie spice is very simple to make, and something I’m so lucky to get it easily without stress. Unlike my friends who leave outside American, finding pumpkin pie spice at the supermarket is sometimes impossible to get.

The homemade pumpkin pie spice Ingredients–

  • 1 tbs + 1 teaspoon ground nutmeg
  • 1 tbs mixed spice
  • 1 tbs+ 1 teaspoon ground ginger
  • 1/3 cup ground cinnamon (I prefer to use Saigon cinnamon because of its flavor)
  • 1 tbs ground cloves

Just mix all the ingredients together in a small bowl and store in a sealed container or jar! Use it when required.

How to Make No-Bake Healthy Pumpkin Pie Energy Balls

In a large bowl, combine flour, protein powder and pumpkin pie spice.

In a separate bowl, microwave cashew butter, syrup, and pumpkin puree for 30 seconds – 1 minute until it’s easy to mix the ingredients together.
Pour the cashew butter mix into the dry ingredient mix and stir to combine.
Freeze the dough for about 10 minutes so it hardens enough to handle.
Line a baking sheet with parchment paper. Roll the dough into about 20 balls and arrange on the baking sheet.
Refrigerate until fully chilled, then store in an air-tight container in the refrigerator.
