This healthy, low carb cauliflower mac and cheese recipe is the perfect side dish for dinner! It’s creamy, and makes a great low carb cauliflower mac and cheese recipe. You will LOVE the taste of these easy cauliflower recipe.

When I first went keto, one of my most missed side dishes was macaroni and cheese.  I needed to find a delicious recipe – so I decided to make a keto cauliflower mac and cheese. Although it doesn’t taste the same like the normal macaroni– but it taste so delicious.

This my low carb cauliflower mac and cheese is the delicious keto-friendly cauliflower recipe for weeknight dinners! With this kind of healthy cauliflower mac and cheese for dinners, you are good to go!

We’re going to keep it very simple and faster because everyone is usually busy and has no time to spend hours whipping up a single side dish for dinner on a busy weeknight.

So let’s get started by bringing some water to a boil over high heat.

How to Make this Low Carb Cauliflower Mac and Cheese Recipe

Ingredients For Making Cauliflower Mac and Cheese

  • 16 ounces of cauliflower, chopped into small sized pieces of your choice.
  • ¼ cup heavy cream
  • 2 ounces cream cheese, room temperature
  • 1 cup grated cheddar cheese
  • 1/3 cup grated Monterey jack cheese
  • 1/2 teaspoon of ground mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked pepper

Direction for Making Cauliflower Mac and Cheese

  1. Chop up some cauliflower into macaroni sized pieces. Chopping these cauliflower into smaller size, is a big key to this recipe, so please avoid to leave huge chunks.
  2. For the best taste and texture, I usually make these recipe with a bag of fresh cauliflower florets instead of a whole head.
  3. Pour the cauliflower pieces into the pot and boil it for 5 to 10 minutes.
  4. Remove the amount of water content from the cauliflower and put it back to the hot pan. Leave it for a while in a low heat.
  5. Put some heavy cream, cream cheese, cheddar, Monterey jack, ground mustard, and salt and pepper to taste.
  6.  Turn the mixture very well, until the cheese has melted and everything is well mixed together.

The texture of the cauliflower is a little bit softer since it’s boiled very well. so just give these recipe a try.
